Ingredients for making pumpkin barfi
Pumpkin (Sitaphal) – 1 kg
Desi Ghee – 4 tbsp
Sugar – 250 grams
Khoya (Mawa) – 250 grams
Almonds – 12 (chopped)
Cashew – 12 (chopped)
Cardamom – 6 (crushed)
Pistachios – 1 tbsp (finely chopped)
How to make Pumpkin Barfi
To make the pumpkin barfi first, wash and peel the pumpkin and take out its seeds. Now grate the pumpkin. Heat ghee in a pan and add grated pumpkin. Cover it with a lid and let it cook on medium heat. After a while, stir it again and cover until the pumpkin becomes soft. After this, add ground sugar to the pumpkin and cook while stirring. After a while you will see that a lot of water is coming out of the pumpkin. In such a situation, cook the pumpkin with a spoon and take care that it is not under the pan of the pan. Keep stirring it till the pumpkin water dries completely.
Now add remaining ghee to it and fry it while stirring well. After this, add khoya (mawa) and chopped dry fruits and cook it while stirring until it becomes so thick that it starts to freeze. To check whether it is cooked or not, stick it on your fingers and if it appears like wires are formed, then understand that it has become frozen. Add cardamom powder to it and turn off the heat. Now put ghee in a big plate and flip the prepared mixture in the pan. Let it cool for a while so that it freezes. After this, cut it into the desired shape with a knife. Take your pumpkin barfi ready. Eat yourself on the fast and feed the guests as well.
