Recipe for making Rasiya
To make rasia i.e. jaggery kheer, first put milk in a big vessel to boil. With this, cut dry fruits (almonds, cashews, raisins) into fine pieces and keep them aside. After this, wash and clean half cup of rice and soak it in water for 2 hours. When the milk boils, add the rice to the milk. Stir the milk with a spoon so that it does not burn. After the kheer comes to a boil, slow down the gas. Keep stirring it every 2 minutes so that it does not stick to the bottom of the pot.

Put ½ cup water and jaggery in another vessel and keep it on the gas. When the jaggery dissolves completely in water, turn off the gas. Now when the rice becomes soft in milk, add cashews, raisins and almonds to it. When the rice mixes well with the milk, add cardamom powder to it. When the kheer cools down, filter the jaggery solution with a sieve and mix it in the kheer. Now your rashi kheer is ready.
