Ingredients for Eggplant Pizza:
3 brinjals round brinjal (large size)
1 tomato
basil leaves
200 grams mozzarella cheese
1/2 cup parmesan cheese
1/4 cup bread crumbs
4-5 cloves garlic
1 big onion
oregano or italian seasonings
salt to taste
black pepper to taste
olive oil as needed

Eggplant Pizza Recipe:
To make eggplant pizza, first wash your brinjal properly and cut it a little thick in a round shape. Now sprinkle salt on these pieces and keep them for 15-20 minutes. After this wash these brinjal pieces and dry them with a clean cotton cloth or tissue paper.

Put the pan on the gas. Add oil to it and heat it well. Pan fry by adding eggplant slices, that is, fry well, but do not deep fry. If you have oven then you can also bake or grill the brinjals. Now put 1 teaspoon olive oil in the same pan, add finely chopped garlic and onion and cook for a while. Now add tomatoes and cook for a while.

Add salt, pepper to the pan, cook till the tomatoes become soft. After this add finely chopped basil leaves, sprinkle oregano on top. Pre-heat the oven to 200 degrees. Apply olive oil in a baking tray and apply this tomato at the bottom with a brush, put 3-4 fried eggplant pieces on it and rub both types of cheese on top of it. Layer it several times, layer by layer, until the baking tray is full. Put the baking tray in the oven and cook it for 10-12 minutes. Cook the Eggplant Parmesan until the cheese melts. Your hot Eggplant Parmesan is ready.
