Ingredients for Brinjal Tawa Fry
Eggplant – 2 medium sized
Mustard oil – 4 tsp
Besan – 3 tsp
Green coriander – finely chopped
Green chili – 2
Ginger paste- ½ Spoon
Asafoetida – pinch
Cumin – tsp
Coriander Powder – 1 tsp
Amchur – tsp
Garam masala – tsp
Red chili powder – tsp
Turmeric Powder – tsp
salt – as per taste

How to make Eggplant Tawa Fry
To make Brinjal Tawa Fry, first mix gram flour, chopped green chilies, ginger, cumin powder, coriander powder, asafoetida, mango powder, garam masala, red chili powder, salt, turmeric powder and green coriander in a bowl. After this cut the brinjal into thick round pieces. Then put each piece in the spices and wrap it in spices from both the sides. After this, put the pan on the gas and heat it and put some oil on it and fry the brinjal on low flame. Roast the brinjal till it turns golden brown from both the sides.
