Ingredients for Mint Egg Curry
5 boiled eggs
2 tablespoons oil
10 curry leaves
1 tsp mustard seeds
2 medium sized onions (cut into pieces)
A paste of 1 onion, ginger and garlic and mint leaves
1/4 tsp turmeric powder
1/2 tsp red chili powder

2 tsp green coriander
2 tsp urad dal

How to make Mint Egg Curry
To make egg curry, first boil the eggs and peel them and keep them aside. Now heat oil in a pan. Add curry leaves and mustard seeds to it and let them crackle. Now add onion, garlic, mint and ginger paste to it. Let it cook on medium flame for 5 minutes. Now add turmeric and red chili powder and stir it well. Add tomatoes and salt to it and cook on low flame for 15 minutes. After this, add green coriander and eggs to it. At the same time, for tempering, put 1 tablespoon urad dal in hot oil and fry it until it becomes crispy. Now spread this tempering on the curry. Your hot egg curry is ready.
