Basmati Rice – 2 cups (cooked)
Peas – cup
Paneer – 1 cup (cut into small pieces)
Broccoli or Cauliflower – cup
Potato – 1
Carrot – cup (finely chopped)
Ghee – 2 to 3 tbsp
Cashew – 2 to 3 tbsp
Almonds – 2 tbsp
Raisins – 2 to 3 tbsp
Salt – 1 tsp or as per taste
Cumin – tsp
Whole garam masala – 2 big cardamom, cinnamon – 1 inch piece, cloves 4-5, black pepper -10-12
Lemon juice – 1 tbsp
Method to make Navratan Pulao:
To make Navratan Pulao, put the kadhai on the gas. Put oil in it and heat it. Fry cashews and almonds lightly in oil for 1 to 2 minutes and take them out in a plate. After this, fry the paneer a little and take it out.
Till the paneer is roasted, cut the potatoes into small pieces. Take out the paneer as soon as it turns light brown. Then, also put the peas in the oil and cover and fry for 1 to 2 minutes. Take out the roasted peas in a plate.
After this, put potato pieces in oil and fry them lightly. Take out the fried potatoes as well. Put carrots and cabbage in the pan and fry till they become crunchy and take them out in a plate.
Add cumin seeds to the remaining hot oil and splutter. After this, put the whole spices in the pan and fry them. Now add cooked rice, salt, lemon juice, roasted vegetables, paneer, roasted cashew nuts and almonds and mix it well. Navratan pulao is ready, take it out in a plate and serve.
