What is needed to make Pav Bhaji?
- 1 cup finely chopped onion
- 1 tsp ginger-garlic paste
- cup finely chopped carrots
- tsp red chili powder
- half teaspoon turmeric powder
- tsp coriander powder
- 2 tsp pav bhaji masala
- tsp garam masala
- tsp chaat masala
- cup tomato puree or tomato paste
- 5-6 tsp finely chopped coriander leaves
- cup finely chopped or grated bottle gourd
- cup capsicum
- 2 boiled potatoes
- Butter, Desi Ghee or Butter
- salt to taste

How to make Pav Bhaji
First prepare the bhaji. To make bhaji, keep a wok or pan on the gas. Heat it by adding butter, butter or desi ghee. Add finely chopped onions to it. When the onion turns golden brown, add ginger-garlic paste and tomato puree and fry. Now add turmeric and red chili powder to it. Add bottle gourd, finely chopped carrot and coriander powder and mix it.

Mash boiled potatoes in it as well. Now add salt and pav bhaji masala as per taste. Add water to it and let it cook. If you want, you can boil carrots and bottle gourd first in a separate pan. This will make the bhaji quicker. Stir the vegetables in between. Add garam masala and chaat masala to it and switch off the gas when the vegetables are cooked.
Now put the pan on the gas for the pav. Put ghee or butter on a hot pan. After this, cut the pav from the middle and keep it on the pan. If you want, you can sprinkle chaat masala or pav bhaji masala over it. Bake the pav well. You serve bhaji with hot pav. Finely chopped onion-tomato, grated cheese and finely chopped green coriander can be decorated on top of the bhaji. You can also add lemon juice over it. You can also serve chutney and pickle with it.
